Nitriding Process:

  • Nitriding is a surface hardening process that is applied to steel surfaces to increase their wear resistance, fatigue strength, and corrosion resistance. In the context of cookware manufacturing, nitriding is often used to improve the performance and durability of carbon steel cookware.
  • In the case of cookware, the nitride layer is especially useful because it prevents food from sticking to the surface and also reduces the likelihood of corrosion and wear and tear caused by frequent use.
  • Overall, the nitriding process is a valuable technique for improving the performance and durability of carbon steel cookware, making it more reliable and longer-lasting for everyday use in the kitchen.

 

Seasoning:

  • 1. Wash the wok thoroughly with hot water and a scrub brush to remove any manufacturing residue. 
  • 2. Heat the wok over medium-high heat until it is hot to the touch. 
  • 3. Add a generous amount of oil, such as vegetable or canola oil, to the wok. 
  • 4. Using a paper towel or heat-resistant brush, spread the oil evenly across the entire cooking surface and up the sides of the wok.
  •  5. Continue heating the wok on medium-high heat until it smokes well allowing the oil to soak into the surface. 
  • 6. Turn off the heat and allow the wok to cool completely. 
  • 7. Once cool, discard the oil and wipe away any excess with a paper towel. 
  • 8. Repeat steps 2-5 at least three to four more times, building up a strong and durable non-stick coating. 
  • 9. After the final seasoning, wipe the wok with a thin layer of oil and store it in a cool, dry place. 
  • 10. Regularly use and clean the wok, adding a light coating of oil after each use, to maintain and enhance the seasoning over time. 

Care And Usage:

  • Gently wash the wok with soft sponge or dish towel and a mild detergent. Avoid using metal scrubbers as it will strip away the seasoning of the wok.
  • If you have food that’s stuck or burnt to the pan’s surface and requires scrubbing to remove, you’ll need a little water to loosen the debris.  Add water to your pan and boil it on the stove top. Alternatively, u can soak the wok with tap water for around 30 minutes.
